			<content:encoded><![CDATA[<p><span style="color: #333333;">My Himalayan tours are all about delicious food such as our rainbow salad of delicious local vegetables, herbs and spices of the area. Although some of those greens are not available in the bay area I have found some nutritious  substitutes which I posted in a recipe a few months ago and am also sharing as a video version below.<br />

<p><span style="color: #333333;">This nutritious recipe includes power greens such as Kale and Swiss Chard. Did you know that one   cup of Kale provides over 300% of Vitamin A and 80% of your Vitamin C   daily needs,  while Swiss Chard provides 374% of your Vitamin K daily needs.<br />

<p><span style="color: #333300;">Statistics indicate more and more of us women are vacationing or taking business trips alone. You may or may not be heading off on a Himalayan tour, but you may indeed find yourself traveling alone in a new and unknown place. I myself have been on many trips by myself in unfamiliar cities when I was still working in the corporate world. This led me to write my travel ebook on information, tips and tricks that I have either researched or personally come up with that I have found useful.  So I decided to post a few of them here and hope they come in handy for you ladies out there when you go on your next trip &#8211; be it to the wilds of Kenya, a Himalayan adventure, or to your client meeting in Toronto.<br />
</span></p>
<p><span style="color: #333300;">Some of these tips were added to the travel checklists through the years.<br />
</span></p>
<ul>
<li><span style="color: #333300;">Pack some toothache medicine. Depending on where you are, you may not want a local dentist as instruments may not be properly sterilized.</span></li>
<li><span style="color: #333300;">Take a small container of Vaseline. It is a great anti-friction ointment and can be used on feet to prevent calluses and blisters, or as lip balm.</span></li>
<li><span style="color: #333300;">Carry some baby wipes to freshen up your face and any other parts of your body when you do not have access to water.</span></li>
<li><span style="color: #333300;">Depending on where you are, flowing skirts conveniently cover your legs when you are sightseeing in churches and temples, and are a perfect coverage for emergency bathroom breaks out in nature.</span></li>
<li><span style="color: #333300;">To counteract jet lag, once you get to your destination, expose yourself to as much sunlight as possible as natural sunshine will sync your circadian rhythm to your new environment.</span></li>
<li><span style="color: #333300;">Take a door stopper to lodge under your hotel room door for extra safety. This is very handy for hotels without safety latches.</span></li>
<li><span style="color: #333300;">Looping your money belt around the belt loops of your pants make it harder for thieves to run off with it.</span></li>
<li><span style="color: #333300;">Hotel reception should not say your room name aloud. If they do, ask for a different room.</span></li>
<li><span style="color: #333300;">Take a pedometer and track how many miles you walk during your vacation. You may log thousands of miles as you are sightseeing and give you a great sense of accomplishment you can brag about when you get back and it will motivate you to walk more, which is good for your health.</span></li>
</ul>

<ul>

<li style="font-family: Verdana, Geneva; font-size: 11pt;"><span style="color: #333300;">1 medium size pickle style cucumber, cut into cubes</span></li>
<li style="font-family: Verdana, Geneva; font-size: 11pt;"><span style="color: #333300;">2 medium tomatoes cut into cubes</span></li>
<li style="font-family: Verdana, Geneva; font-size: 11pt;"><span style="color: #333300;">½ yellow pepper cut into pieces</span></li>
<li><span style="color: #333300;"><span style="font-family: Verdana, Geneva; font-size: 11pt;">½ </span><span style="font-family: Verdana, Geneva; font-size: 11pt;">cup shredded carrot</span></span></li>

<li style="font-family: Verdana, Geneva; font-size: 11pt;"><span style="color: #333300;">1 tea spoon ginger juice</span></li>
<li style="font-family: Verdana, Geneva; font-size: 11pt;"><span style="color: #333300;">1 table spoon yogurt</span></li>
<li style="font-family: Verdana, Geneva; font-size: 11pt;"><span style="color: #333300;">¼ cup olive oil</span></li>
<li style="font-family: Verdana, Geneva; font-size: 11pt;"><span style="color: #333300;">1 tsp roasted grounded cumin seeds</span></li>
<li style="font-family: Verdana, Geneva; font-size: 11pt;"><span style="color: #333300;">Salt and pepper to taste</span></li>
<li style="font-family: Verdana, Geneva; font-size: 11pt;"><span style="color: #333300;">Cilantro to garnish</span></li>

<p><span style="font-family: Verdana, Geneva; font-size: 11pt;"><span style="color: #333300;">Whisk all ingredients for dressing together, pour over the beans and let it sit together for about 10 minutes. Add all the vegetables in a bowl and layer the beans on top and gently toss it all together.. Garnish with cilantro.</span></span></p>

<p><span style="color: #333333;">The Goji berry is another fruit rich in antioxidants, specifically carotenoids such as beta carotene and zeaxanthin. It is found in China and the Himalayas and is a dark red fruit related to the cranberry and blueberry. Goji berries have a tangy sweet taste and are considered nutrient dense, rich in phytonutrients and containing essential vitamins and minerals.</span></p>
<p><span style="color: #333333;">I grew up eating Goji berries in the Himalayan foothills. My aunt had huge bushes on her property that grew these little berries abundantly by the hundreds. I would gather the large, ripe soft ones and eat them by the dozens.  They were juicy and delicious!</span></p>
<p><span style="color: #333333;">And guess what! I found a website that actually sells seeds so I will be ordering some and growing my own. They are known to be very hardy plants so I am hoping to enjoy some fresh fruit in a couple of seasons. Can’t wait.</span></p>

<p><span style="color: #414141;">Anthocyanins create the red, purple and deep blue tone in many fruits, flowers and vegetables such as red grapes, blueberries, blackberries and the acai fruit pulp according to some studies, indicate higher antioxidant properties than cranberries, strawberries or even blueberries.</span></p>

<p><span style="color: #414141;">So why am I writing these posts about these superfruits? Because I am exploring a “vitamin stick” product high in anti-oxidants from these superfruits, including the means to absorb them into our cells effectively so the body can function at its optimum for a longer, healthier life. I certainly don’t believe these superfruits are the cure all for everything and there are a lot of scams out there, however if they contribute to a healthier mind and body then I am definitely interested in finding out the best way to utilize them. After all, <a href="http://abcnews.go.com/Technology/story?id=3362367&amp;page=1">research</a> has indicated that <a href="http://www.komonews.com/economy/life/51148017.html">living past 100</a>, in fact up to 120 years of age is not pie in the sky any longer, and although some of it can be attributed to out genes, how we live contributes significantly to this longevity. Therefore I am of the opinion that if we take care of ourselves holistically, coupled with advances in technology and medicine, we can become vibrant, active, and healthy super-centenarians.</span></p>

			<content:encoded><![CDATA[<p><span style="color: #2c2c2c;"><em>This is an excerpt from my book The Deity Diet which highlights some of the personal experiences my American husband and children had, integrating with the culture of India and with my Indian family.</em></span></p>
<p><span style="color: #414141;">In the culture of <a href="http://www.lonelyplanet.com/india/northeast-states" target="_blank">Northeastern India,</a> a baby’s first birthday is cause for celebration. We prepare a big feast for relatives, friends, and neighbors, who all gather to wish the baby well.</span></p>
<p><span style="color: #414141;">When my daughter was about to turn a year old, however, I was living in the United States with my American husband. Not a single Indian relative was here, and his family was so scattered about, it would have been impractical to get everyone together in one place.</span></p>
<p><span style="color: #414141;"><img class="size-medium wp-image-414 alignleft" title="Baby" src="http://himalayanbootcamp.com/wp-content/uploads/2009/12/Baby-300x207.jpg" alt="Baby" width="300" height="207" /></span></p>
<p><span style="color: #414141;">We were fairly young and didn’t have much money, but I wanted so badly to take my daughter home and show her off to my family that we did what any proud <a href="http://ny1.com/1-all-boroughs-news-content/ny1_living/parenting/99500/book-offers-useful-tips-for-modern-day-parents/?ap=1&amp;=Flash" target="_blank">modern-day parents</a> would do: we racked up our credit cards and took off for India, baby in tow. Here is a picture of the happy baby before our trip.</span></p>
<p><span style="color: #414141;">At that time, I had six younger brothers and sisters still living at home, plus my mother, grandmother (sadly, my grandfather had passed away), a multitude of aunts, uncles, and cousins, and tons of old friends and neighbors.</span></p>
<p><span style="color: #414141;">You can probably imagine what it was like to bring an eleven-month-old baby into this lot, where the youngest child was my brother, age seven, practically ancient in comparison to his new niece. My daughter was passed around from one person to another, kissed, doted on, fed all kinds of very un-baby-like treats that I pretended not to notice, and was thoroughly spoiled.</span></p>
<p><span style="color: #414141;">And, of course, there was the complicated business of planning <a href="http://www.parents.com/fun/parties/special-occasions/baby-first-birthday-party/" target="_blank">The Birthday Feast,</a> who to invite, what to serve, how much to cook, who would cook it; and “should-we-only-have-tea-or-have-tea-and-then-later-on-dinner,” what music to play, who will provide the blessing, and so on and so forth. You would think we were planning a wedding.</span></p>
<p><span style="color: #414141;">By the time my mother and grandmother were through, it was almost like a wedding, with over two hundred guests. Most people in India think nothing of this – the celebration is both a feast and a religious ceremony – but to my American husband it was all a little mind-boggling.</span></p>

			<content:encoded><![CDATA[<p>For most of us, the next few weeks are going to be stressful &#8211; what with Thanksgiving in a couple of days, then there&#8217;s the Christmas shopping and Christmas celebrations, New Years etc &#8211; not only will we be indulging on all kinds of goodies but it will be taxing on our time and finances as well.</p>
<p>So here are <strong>5 Tips</strong> that will hopefully help you save some money and/or time:</p>
<ol>
<li><span style="color: #000000;"><strong>Get a FREE Turkey!</strong> </span>Many grocery stores are currently offering free turkeys so check out the local one in your area. I myself just got a 14 lb bird after I spent $99 on groceries at <a href="http://www.luckysupermarkets.com/">L</a><a href="http://www.luckysupermarkets.com/">ucky&#8217;s</a>.</li>
<li><span style="color: #000000;"><strong>Hav</strong></span><span style="color: #000000;"><strong>e a Potluck style Thanksgiving or Christmas.</strong></span> If you are having friends or family over, have them bring one or two items so you have less to do, or do the same if you are going to someone else&#8217;s place.  <a href="http://www.marthastewart.com/photogallery/thanksgiving-sides">Martha Stewart&#8217;s side dishes</a> look yummy  if you want to check out her website.</li>
<li><span style="color: #000000;"><strong>Incorporate </strong></span><span style="color: #000000;"><strong>anti-stress related  foods into your menu</strong>. </span>In addition to turkey  which seems to definitely get everyone dozing off after their feast (LOL),  studies have shown that almonds help lower blood pressure and are also high in B vitamin components. Another stress relief power food is the Avocado so be sure to include them  in your salads as they are high in potassium which reduces your blood pressure as well.</li>
<li><strong><span style="color: #000000;">Give it away</span> </strong>- try to go without gifts this year and use the money to help someone else. You will make a difference to someone less fortunate. I was so proud of my daughter and her husband when I found out that they had used the money they had budgeted for gifts for each other and instead spent it on filling a number of shoe boxes for <a href="http://www.samaritanspurse.org/">Operation Christmas Child</a>.</li>
<li><span style="color: #000000;"><strong>Avoid the Black Friday Rush</strong></span> &#8211; If you do have gifts to purchase, avoid black Friday and try to shop the following Monday &#8211; there will still be awesome sales, as stores are really trying to get customers in. And you will avoid the insanity of packed stores the day after Thanksgiving. However if you absolutely must shop on Black Friday, here is a <a href="http://www.blackfriday.info/sales/">BlackFridayInfo.com</a> link that may help you search ahead of time for what some stores are advertising on this day.</li>
</ol>

<p>Bitter Melon, also known as Bitter Gourd with the English name of Momordica Charantia, is an amazing fruit-vegetable that appears to have very interesting properties for fighting diabetes, cancer and certain infections and fevers.  It is a green cucumber like food with a rough skin and is grown all over India (called Karela) and other Asian countries.  It can be found in most grocery stores in the United States.</p>
<p>Bitter melon does have a very bitter flavour so it is an acquired taste for most people. I certainly acquired this taste early in my childhood from my grandmother and I LOVE bitter melon! My grandmother would steam it, mush it up, then add lemon juice, chopped garlic, onions, salt and fresh diced hot chillies to it and our family would eat it as one of our side vegetables with rice and curry.</p>
<p>Bitter melon has been used to control blood sugar levels throughout the centuries and science appears to support this. This gourd like fruit contains bioactive properties and could be a<span style="color: #0000ff;"> <a href="http://www.sciencedaily.com/releases/2008/03/080327091255.htm">powerful treatment for Type II Diabetes</a>.</span> One of it&#8217;s benefits is that it allows the body the ability to improve glucose tolerance.</p>
<p>Research indicates that bitter melon has four components (momordicosides Q, R, S, and T with karaviloside XI) which create <span style="color: #0000ff;"><a href="http://www.cell.com/chemistry-biology/abstract/S1074-5521%2808%2900082-3">increased activity of AMPK</a></span>, which is directly beneficial to fighting diabetes and obesity.</p>
<p>Additionally bitter melon has certain components that appear (again, according to research) to have a potential for <span style="color: #0000ff;"><a href="http://www.ncbi.nlm.nih.gov/pubmed/10810336?dopt=Citation">treatment against breast cancer</a></span> , <span style="color: #0000ff;"><a href="http://www.ncbi.nlm.nih.gov/pubmed/19384952?ordinalpos=7&amp;itool=EntrezSystem2.PEntrez.Pubmed.Pubmed_ResultsPanel.Pubmed_RVDocSum">prostrate cancer</a></span>, and possibly<span style="color: #0000ff;"> <a href="http://www.ncbi.nlm.nih.gov/pubmed/16847441?ordinalpos=4&amp;itool=EntrezSystem2.PEntrez.Pubmed.Pubmed_ResultsPanel.Pubmed_RVDocSum">HIV related infections</a></span>, however anti HIV properties are not conclusive and more research is needed. Some of its other herbal uses include treatments for digestive and skin diseases.</p>
<p>You can add bitter melon to your diet as either a steamed vegetable or juice this great little plant. For some people it is more palatable to eat it fried. It can also be taken as a bitter melon extract.</p>
<p>If you are taking medication for blood sugar levels, please check with your doctor before use. It is not recommended for people with liver problems and should not be used during pregnancy as it may stimulate the uterus. 			<content:encoded><![CDATA[<p>Ever met someone who absolutely changed the way you think? Well, a few months ago I met Cassandra Rae of <a href="http://simplyfearless.com/">Simply Fearless</a>, an absolutely amazing woman and one of the most positive thinkers I know. Cassandra&#8217;s online bio is &#8220;I am simply and beautifully human!&#8221; What an attitude! <img class="alignright size-medium wp-image-303" title="cassandra" src="http://himalayanbootcamp.com/wp-content/uploads/2009/07/cassandra-224x300.jpg" alt="cassandra" width="107" height="144" /></p>
<p>I went to Cassandra for help with my blog as I was totally stuck with what I call a mental blog block (she is also a blogging expert and can provide tons of ideas in a matter of minutes). So after helping me get unstuck we starting talking &#8211; I was having a totally overwhelming day (she is also a great listener) and going through the &#8220;I have to do this&#8230;&#8221; and &#8220;I have to do that..&#8221; &#8211; she looked at me and said, &#8220;Connie, change the &#8220;I have to..&#8221;  to  &#8220;<strong>I get to&#8230;</strong>&#8220;.</p>
<p>I just looked at her in amazement that such powerful little words just popped out of her that could completely change an attitude! Those words have made such a difference in my life since then and I have reminded myself so many times to say &#8220;I get to&#8230;&#8221;.</p>
<p>Overwhelming tasks become positive opportunities to be thankful for. For example, I have to cook tonight becomes <em>I am fortunate to have a husband or child or family I get to cook for&#8230;</em> I have to get these books back to the library becomes<em> I am thankful for FREE books and movies I get to enjoy</em> and so on and so forth.</p>
<p>I have passed this on to my daughters, my sisters, and my friends. Who knows how many attitudes and lives these little words have impacted.  Just amazing.
